Do you feel brain fogged, after eating certain foods? Following may be the reason!
Cross-reactivity is observed between the antibodies produced, against the dietary aquaporins and the human aquaporins as they share homology.
Corn, tomato, soya bean, spinach leaf aquaporins cross-react with the aquaporins of the brain, which leads to Blood-Brain Barrier(BBB) permeability and, hence setting the stage for neuro-autoimmunity and neuro-degeneration.
How does this happen?
Astrocytes are star-shaped glial cells and are the major components that maintain our brain hemostasis, neuronal metabolism and support the BBB.
Plants and human aquaporins show antigenic similarity. An anti-immune reaction against dietary aquaporins results in the disruption of the astrocytes, thus, resulting in the breaching of the BBB, this leads to leaching of food aquaporin antibodies along with other circulatory pathogenic antibodies into the nervous system that further induces the neuro-autoimmunity.
